What Short Ribs Are Best For

Dutch Oven Short Ribs (Simple Braise Method)
A simple short ribs braise: sear for flavor, build a broth base, then braise low-and-slow until fork-tender.
Total Time: 210 minutes
Season
Pat dry and season with salt (pepper/garlic optional).
Sear
Sear in hot cast iron/Dutch oven with a little tallow until browned on all sides.
Build the braise
Add onion/garlic. Deglaze with broth (or add wine—see below).
Braise low-and-slow
Cover and cook until the meat is very tender and pulls easily from the bone.
Rest + serve
Rest 10 minutes. Serve with sauce and comfort sides.

How to Know When Short Ribs Are Done
They’re done when they’re effortless. A fork should slide in easily, and the meat should pull apart without resistance. If they’re chewy, they need more time.

Soap is fine on cast iron. Rinse, light scrub, then dry completely.
- Rinse warm soon after cooking (when safe).
- Light soap scrub with tallow dish soap.
- Dry completely and warm 30–60 seconds.
